The wine for Holy Mass is produced according to the dictates of Canon Law, which in Chapter 1, Article 3, Canon 924 states: "The wine must be natural, from the fruit of the vine and unadulterated." Under the supervision of the Director of the Liturgical Office of the Diocese of Mazara del Vallo, all access points to the tanks dedicated to the wines for Mass are sealed with sealing wax. The person in charge removes and replaces the seals each time the product is drawn from the tanks and bottled, to ensure its authenticity. The Diocese issues a certificate authorizing the company to market and produce. At Cantina Martinez, this certification has been consistently recognized since the 1960s. In the presence of the director of the Liturgical Office, the wine is bottled and shipped to dioceses around the world, always accompanied by a certificate of suitability from the diocese. Each bottle bears the authorization reference from the diocesan liturgical office and the seal of the respective diocese. At Cantina Martinez, the wine for Holy Mass is produced using a blend of the main native grape varieties of the province of Trapani: Catarratto, Inzolia, and Grillo for the white wines, and Nero d'Avola and Nerello Mascalese for the red wines.
